I've cut out bread and it's changed everything for me...

Swordfish steaks marinaded in soy, garlic, ginger and sesame. Griddled and served with home made potato salad with fresh garlic chives. Mixed salad.

Warmed Saké as a treat.

How well do you cook it? - seem to read mixed suggestions about it needing to be fully cooked all the way through

You can have it not fully cooked but our preference is to cook it fully as that is what our household prefer.

The recipe suggested 5 minutes per side. I used my cast iron griddle pan that I normally use for steaks. Pre-heated for 5 minutes on a meduim sized burner at full tilt. I did back off the heat a bit for the second side. The steaks were cooked right through. They started out about 1" thick.

I've cooked tuna steaks in the same pan around 4 minutes per side but these were thinner plus it's easier to see from the side how the cooking is proceeding.

I did tuna steaks ages ago (grilled), but struggled to tell when they were 'done' - so ended up over cooking and they were rubbery... it's put me off trying since...

Boneless lamb leg steaks griddled with mint, rosemary and garlic. Roasted taters and parsnips. Steamed broccoli, carrots, white cabbage and sprouts. Gravy and mint sauce.
