I had a bowl of weetabix minis fruit and nut for my sunday dinner as the pc clan were to intent on getting there butts kicked, I couldn't stay away long :D :D

There's a secret to egg fried rice.....

Let me share it with you greenkeaper-san.....

Cook the rice like this (preferably many hours before hand):

When the rice has cooled sufficiently, put it in a bowl/tub and place it in the fridge.

Then, when you are ready to start cooking your stir-fry use this recipe for the egg fried rice:

The trick is to make sure that your rice has cooled completely before you start trying to turn it into egg-fried rice.

Note the bit in the rice recipe about leaving it undisturbed. That's very important. You are steaming the rice.

I have given up trying to get "exactly" the right amount of water so it's all absorbed but not polyfiller. So my tip for plain boiled rice is wash the rice well then use more water than instructions say and simmer for the correct length of time. Then drain and pour boiling water over drained rice through a sive, shake out excess water and serve.:cool:

Next time, try the recipe for steamed rice that I posted above.

Anyone tried red rice? You can boil it for 2 hrs and it's still like iron filings.

A fail-safe method for cooking rice:

Cook the rice as you normally would (use about two/three measures of water for one measure of rice). Another way is to rinse the rice thouroughly under a cold tap before boiling it to get the excess starch off it.

Not if you use pandan rice (thai fragrant rice), which shouldn't be washed :)

Tonight is Roast Leg of Lamb marinated in Garlic Puree with Roast Potatoes and Roast Onions with Cauliflower Cheese, Sliced Green Beans, Peas, and Onion Sauce. Mint sauce on the side!:D Yum, Yum, Yum, Yum!:)

The blokes at work will love me tomorrow stinking of Garlic and Onions!:D :D :D

I quite like lamb myself, Budwieser. Incredibly expensive though, and tricky to cook right. Usually opt for it in restaurants.

Next time stab holes in it and poke the garlic in to it (garnish with sprigs of fresh rosemary if you have it and glaze with honey), leave it overnight and then roast it...

You will be amazed!!!

I guarantee it, even more so if you bbq it over an indirect heat in a weber!!!

Cook lamb slowly and you will get excellent results, a leg of lamb done in a slow cooker all day is very hard to beat for flavour and texture.

If you cook it with stock, wine, onions, garlic and veg etc you can make some excellent gravies as well!!!

Steak casserole with onions & carrots. New potatoes roasted in their skins, sprinkled with herbs and roasted in olive oil, fresh spring cabbage and green beans. Washed down with a bottle of Deen De Bortoli, Family Reserve, Durif 2002. a superb antipodean number, a much better finish than their cricketers of late. :)

sounds yummy - especially the wine, I havn't tried a Durif - will keep my eye out. :tu:

we had Scottish sirloin steak (rare/medium), potato wedges & tinned peas :)

wine - Chilean Cabernet Sauvignon - about £3 a litre & 14% :angel:

I went out for meal last weekend and had Partridge for the first time. Very nice too.

I've never tried Pheasant though, let us know how it goes, if you can taste it through all the extras though.

Pheasant is very good eating IMHO, the extras are just my 'thing' it would have been nice cooked as is but I do like a bit of garlic :D

I had pasta and meatballs sunday night with chocolate orange cake for desert, was bloody delicious so much so I'm having it again on Saturday and sadly it will probably be the highlight of the week again, that's the lockdown existence, all the drudge of life and work and none of the fun bits, still little victories

I got 4 nice hen pheasants for £10 from the farmer's market, smaller than the cock but more fat = more flavour.


I like to cook pheasant in whiskey, based on recipe in Leith.


Season pheasant.


In a casserole big enough to snugly take the pheasant. Soften chopped onion, slightly browning then remove from the pan. Add some butter to the oil and brown off the pheasant. Return the onions and add whisky (60ml or more if you want) and flame that off. Cover and put into oven until cooked.


Set bird aside to rest, add some lemon juice and cream to onions and cook through.


I'd have to go lookup the exact quantities/method but that approximates it.
